Cauliflower bake

This recipe is one of my favourite dishes and I’ve been cooking it for a long time.

Whenever I have guests, I do it for them, even though they’re not cauliflower fans. When they taste it, they change their minds!

Cauliflower can be really tasty.

Cooking time: 1 h 30 min

1 Cauliflower

1 Onion

1 hard boiled egg

Tofu (or bacon)

Cheese

For the sauce

Milk (or Oat milk)

Flour

Butter


Cut the cauliflower in florets simmer until it has softened – about 10 – 15 minutes.

In the meantime, cut the onion finely and fry it at low heat.

If you are using bacon, you can add it directly after 15 minutes and fry them together.

If you are using tofu instead for a healthier or vegetarian option, place it on the griddle for more crispiness and add a bit of soy sauce. This recipe works with plain tofu but I recommend using smoked tofu for a stronger flavour.

Hard-boil the egg. Peel it and cut it into small bits and place it on an oven tray. Add also the bacon (or tofu) and the onion.

When the cauliflower is cooked drain it and add to the tray. Mix all the ingredients together making sure they are distributed evenly. Mash the cauliflower with a fork.

The béchamel sauce keeps it all nice and moist. To prepare the bechamel, mix flour and butter in a frying pan and stir as you keep adding milk. When the flour has dissolved, sieve it and add it to the cauliflower mix.

Grate some cheese to top the dish and bake it in the oven with the grill setting for 15- 20 minutes.

When the cheese is melted and a bit brown, the dish is ready to serve.
