Green or Red Curry

Thai food is my favourite food. During our honeymoon about a year ago, we took a cooking course in Chiang Mai to learn how to prepare some of Thailand’s best dishes. I’m not the best cook in the world but I will try my best to show you how to make a delicious green or red curry in an easy way.

Preparation time: 10 minutes
Cooking time: 20 minutes

200 grams of chicken (tofu if it’s a vegetarian dish)

1 tablespoon green or red curry paste. Choose one or the other depending if you want a milder or a spicier taste. Green curry is spicier than red curry.

2 quartered aubergines (or courgettes if you prefer)

2 baby corns

1 carrot (cut the baby corns and the carrot in half and dice to a 1 cm width)

1 broccoli (cut in small chunks)

2 cups of coconut milk

10 sweet basil leaves

2 kaffir lime leaves. Take the stem off before cooking.

1 red chilli

1 tablespoon of fish sauce (soy sauce for a vegetarian dish)

1 tablespoon of sugar

3 tablespoons of oil

Basmati rice


How to prepare (cook in a wok):

Put the oil into the wok at low heat.

Add the green curry paste and stir continuously until you can smell its fragrance. Do not stop stirring, if you do the paste would stick and burn. Keep the fire low.

Add the chicken, pour ½ cup of coconut milk and keep on stirring until the chicken is cooked.

Add the remaining coconut milk and let it boil.

Add all the vegetables: aubergines, carrot, courgette and the baby corns; and stir. Don’t overcook them; they taste better if they are crispy.

Season to taste adding the fish sauce and the sugar. In Thailand fish sauce is used instead of salt. Taste the dish before adding the fish sauce to make sure it’s not too salty.

Add the sweet basil leaf, the Kafir lime leaf and decorate with red chillies.

Pour in a bowl and serve with Basmati rice.

This is an easy dish to cook, it’s fairly quick to make, smells great and is full of delicious flavours! Enjoy :-)
