Hearty Fruity Salad

I love colourful salads, they are healthy and delicious. I tend to randomly mix seasonal ingredients that I have at home on the fridge., therefore each salad is always slightly different, something new to try. But this one I tend to do it more often because I accidentally made it once when friends were over for dinner. Whenever they come round and we dine at the balcony, they ask for it again.
|Hearty Fruity Salad
Preparation time: 15 minutes
1 Maravilla Lettuce
4 Surimi Crabsticks
2 Spring onions
1 Ripe avocado
1 Pomegranate or 1 MangoFor the dressing
Olive oil, balsamic vinegar, salt and pepper or half a lemon zest.For non vegetarian main course
Wash lettuce briefly under the tap and chop in small pieces with a knife or kitchen scissors and put in a big bowl submerged in water for a couple of minutes for a better wash. Rinse and leave in a sieve for getting the excess water drip.
After washing the tomatoes, the spring onions and the carrots, cut them in bite-size pieces and put them on the bowl where we are going to serve the salad.
Add the lettuce in the bowl and mix with the ingredients already on the bowl.
Cut the Surimi crabsticks in chunks and add to the bowl.
Cut an apple into quarters and dice them to also be added to the bowl.
Cut the avocado in half and spoon out the flesh in small chunks with a teaspoon directly onto the bowl.
Cut the pomegranate in half and spoon out the grains carefully into a smaller bowl. Be careful as pomegranate juice stains very easily and it is hard to wash away.
If it is not pomegranate season, or you find it too sour, this same salad with mango pieces instead for a sweeter taste is an option too.
Finally, break 4 whole walnuts and break the hearts with your fingers to make the pieces smaller, always making sure you leave any shell bits out carefully. Sprinkle on top of the salad and it is ready to serve.
Season to taste with olive oil, balsamic vinegar salt and pepper or just add a bit of lemon juice and ground pepper for a more natural taste.
I think this salad is pretty hearty but if you would like to make it a big main course, some chicken breast chunks can be added to the mix.
