Marinated Turkey with Tomatoes confit and Yogurt

I have a dinner club with my friends and we love to share recipes and cook together. We are specialists in quiches, lasagnas, pies, pizzas but we also have healthy recipes sometimes, that is why I would like to share this one with you. This recipe it is great for both, lunch and dinner and can also be a great packed lunch. it is light but very tasty and balanced.
|Marinated Turkey with Poached Tomatoes and Yogurt Sauce
Preparation time: 10 minutes
Cooking time: 45 minutes
400 gr. turkey1 clove of garlic1 tablespoon paprika
1 tablespoon of mixed herbs or spices to taste
1 cup of olive oil
1 tray of cherry tomatoes
Fresh Rosemary and thyme
To prepare the turkey
Dice the turkey in small chunks.
Crush the garlic and mix it with all the spices blending it with olive oil.
Rub it on the turkey and leave it to macerate for at least 2 hours.
When it is ready, grill the turkey and leave it on the side.
Scald the tomatoes to peel them easily.
Place them in boiling water for about 30 – 40 seconds and rinse them with cold water.
When they are peeled, cover the tomatoes in a layer of olive oil and a smattering of fresh rosemary and thyme.
Simmer them at low heat for about an hour. They will be soft and fragrant.
Cucumber and Greek Yogurt sauce
Grate the cucumber or cut it in very small pieces. For a softer flavour, peel it before grating it.
Add olive oil and salt and mix it with the Greek yogurt.
The dish can be served all together on the same plate, or you can serve the sauce on the side. The yogurt sacue is also great from dressing salad leaves to complement this dish.
