Sweet potato with caramelised onion and parmesan cheese

Sweet potato - Boniato Sweet potatos with caramelised onion and parmesan

Preparation time: 10 minutes
Cooking time: 1 h

2 large sweet potatoes

1 large onion

2 spoonfuls of butter (not margarine)

1 spoonful of brown sugar

A pinch of salt

A pinch of pepper

Parmesan cheese


Bake the sweet potatos in the oven at 180 C and leave them to bake slowly.

Every oven is a different world, therefore I cannot tell you how long they need to bake for. Just prick the sweet potato with a toothpick and if it is soft, it’s ready!At the same time place the butter in a frying pan and melt it at low heat.Cut the onion finely and add it to the pan.

To caramelize, keep it at low heat to cook slowly.

After 15 minutes, add the salt and pepper, and leave it on for 10 more minutes.

To serve the sweet potatoes, halve them vertically and place each half on a plate.

Cut each part open with a knife and fill the gap by adding the caramelized onion and the grated parmesan on top.
